Recipes: Reader Submission



Thanks to Marci...we have some new, budget friendly recipes!  


Taco Soup 
Can be made in pot or crock pot (p\Pot with beef/ground turkey, Crockpot for chicken)
You will need:
-2 cans beans (I use great northern and black beans)
-2 cans petite diced tomatoes
-2 large cans chopped green chilis (1 works but I like 2!)
-1 lb. Frozen sweet corn kernels
-1 packet ranch dressing/dip seasoning
-1 packet taco seasoning
-1 lb. Ground beef or turkey OR 1 pckg. chicken breasts

If making in pot, brown ground beef or turkey and drain. Add all other ingredients and heat on medium, stirring occasionally. Serve with shredded cheese, sour cream, and crushed fritos.

In crockpot add all ingredients and add chicken breasts last. Heat on low 6-8 hrs. Before serving, shred chicken and stir. Serve with shredded cheese, sour cream, and crushed fritos.

Chicken Nacho Casserole




-1 large bag tortilla chips (the cheap ones work fine!)
-1 pckg. chicken breasts
-1 large jar salsa
-4 cups shredded cheese (I like the taco or Mexican blend)

Spray 9x13 pan with cooking spray, preheat oven to 350, boil and shred chicken breasts
-layer tortilla chips, shredded chicken, salsa, and cheese
-repeat layers
-bake for 35-45 minutes or until bubbling
*tastes great as is, but topping it with a little finely shredded lettuce and sour cream takes it over the top :)


Easy Chicken Stir Fry
-1 packet stir fry seasoning ( get one that requires you to add your own sugar soy sauce...they taste better than the one that you only add water) **hint--> keep extra packets of soy sauce from the Chinese restaurant and use for recipes like this!!)
-1 pckg chicken breasts
-1 pckg frozen stir fry veggies (I like walmart brand...there are three different types and they are around $1.50)
-2 tbsp. Veg oil
-Whatever u need for stir fry sauce (prob sugar, soy sauce, n water)
-White rice (I use Minute Rice and can usually get it for under a dollar per box)

Warm vegetable oil in skillet over medium-high heat, make sauce mix in separate bowl according to packet instructions; prepare rice while cooking stir fry
-slice chicken into strips n brown in oil
-add frozen veggies n half of stir fry sauce and cool till veggies are warm and crisp, not soggy
- add remainder of sauce and stir until it thickens
-add a little soy sauce to rice n mix up well; put rice on plate n serve stir fry over top
